Cucinare means “to cook.” It is a fully regular -ARE verb, and in a country where food is a daily topic of conversation it comes up constantly.
Infinitive
cucinare
English
to cook
Auxiliary
avere
Past participle
cucinato
Gerund
cucinando
Regular -ARE verb with the stem cucin-. Present: cucino, cucini, cucina, cuciniamo, cucinate, cucinano, with the stress on the second syllable in the singular and in cucinano (cu-CI-no). Note that cucina is both the lui/lei form and the noun “kitchen.” The future and conditional are cucinerò and cucinerei, the imperfect cucinavo, the passato remoto cucinai, cucinò. No form is irregular.
Cucinare can stand alone (cucino io stasera, ti piace cucinare?) or take the dish as its object: cucino un risotto, ha cucinato il pesce alla griglia. For the method of cooking, Italian often uses more specific verbs: cuocere (to cook something until done, as in cuocere la pasta), bollire, friggere, arrostire. Fare is also common for dishes: faccio una torta, faccio il ragù. The noun la cucina means both the kitchen and a style of cooking: la cucina siciliana. Someone who cooks for a living is un cuoco or uno chef.
Cucinare takes avere, with or without an object: ho cucinato per sei persone, abbiamo cucinato tutto il pomeriggio. A preceding direct object pronoun makes the participle agree: le melanzane le ho cucinate alla parmigiana.

Common mistakes
Cuocio la pasta per dieci minuti., not Cucino la pasta per dieci minuti. (I cook the pasta for ten minutes.). When you mean the physical process of cooking food until done, Italians say cuocere. Cucinare is preparing a meal or a dish.
Io cucino stasera., not Io cucina stasera. (I'm cooking tonight.). Cucina is the lui/lei form, and also the noun for kitchen. The io form ends in -o: cucino.
What is the difference between cucinare and cuocere?
Cucinare is cooking in the sense of preparing food or a meal: cucino stasera. Cuocere is the physical act of heating food until it is done: la pasta cuoce in otto minuti. Cuocere is irregular (cotto), while cucinare is regular.
Does cucinare take essere or avere?
Avere in every compound tense: ho cucinato, avremo cucinato. It never takes essere, even without an object.
Is cucinare a regular verb?
Yes, completely. It follows parlare in every tense: cucino, cucinavo, cucinai, cucinerò, cucinerei, cucinato.
